To be completely honest, I am not, and never have been, a pork chop lover. But it has been ages since I've eaten one, and come to think of it, I don't think I have ever even cooked up a pork chop! Again, this recipe completely took me out of my comfort zone! In fact, it actually quite intimidated me to buy some at Costco, and it has just been sitting in my freezer for at least a month, because I was just dreading this recipe. Sorry to all you pork loving eaters out there!
The real reason why I had to put my intimidation aside and finally getting around to cook up this recipe, is right now I am currently doing a "no buy week." Inspired by my favorite YouTuber Sarah Therese, this system consists of eating everything out of the freezer and refridgerator, and pantry! All those items that have been pushed back or pushed aside have been used as ingredients to cook up dinner meals for Ken & I! I haven't eaten out or bought anything from the grocery store this entire week! And I feel as though that is an accomplishment and hopefully I have saved some money in so doing! So thank you Sarah Therese for the inspiration!
Pay day IS tomorrow so I'm waiting till Sunday to go out for my grocery shopping trip, and then next time, I'll go 2 weeks without a "no buy."
Anyways, back to pork chops! The crackers gave the meat a nice breading on the outside, and it reminded me of chicken fingers...somewhat. Because my mind knew it was pork, I had a hard time eating this, only because of my genuine concern of pig meat. Ken, on the other hand, gobbled this right up! I don't know why, but my mind always imagines nasty things when it comes to eating pork...still trying to figure out my meat hesistancies. Ken is helping me overcome this by watching his enthusiasm for eating chops!
