ROMA TOMATO FLATBREAD

Now I must confess just how delightful this recipe was to make! I added so much more than the original recipe called for. As you can see from the picture, I added kale & bell pepper which totally made this recipe! That beautiful piece of parchment paper turned into a nice golden brown underneath the flatbread which added so much to the picture, and somehow to the experience of just eating this Italian meal. It's in the little details in which we can find so much enjoyment in the food that we eat.

I drizzled my garlic infused olive oil over the top of this to give it some moisture as well, since it technically isn't a pizza, but sure did it taste like one! At the same time, I managed to spill some of this green liquid gold all over the place when I went to go set it down! Clumsy me! But I guess that's just what makes the beautiful chaos that happens when you're cooking in the kitchen. No need to stress over spilled garlic infused olive oil!

Also, I should probably mention that I did not use roma tomatoes, just some small grape tomatoes. A tomato is a tomato! And what you have is what you use!
